VIRAL Sheet Pan Nachos (But Low Carb!)

Ingredients:

For the Nachos:

  • 12 jalapenos, sliced in half and cored

  • 1 lb ground beef

  • 1 packet taco seasoning (or homemade)

  • ½ cup bone broth

  • 1 large tomato, diced 

  • ½ small white onion, diced

  • 1 jalapeno, diced (for topping)

  • Fresh cilantro and lime wedges for garnish

  • 1/4 cup Mexican blend shredded cheese (for topping)

  • 1/4 cup sour cream

  • 1/2 cup guacamole to top

For the Cheese Sauce:

  • 2 tbsp butter

  • 1 cup heavy cream or half and half

  • 2 cups shredded cheddar cheese (or a blend like cheddar + Monterey Jack)

  • 4 tbsp cream cheese

  • Salt & pepper to taste

  • Optional: pinch of cayenne, smoked paprika, or garlic powder

Directions:

  1. Preheat your oven to 375F.

  2. Wash, slice and devein your jalapenos. You want to cut them in half, and place them on a baking pan.

  3. Let’s move onto your queso. If you decide to use canned queso, you can add this directly onto another baking sheet. If you’re making a homemade version, add your butter, half and half, cream cheese and seasonings into a saucepan on medium high heat.

  4. At the same time, cook your taco meat. Add your ground beef, taco seasoning and cook until all the way through. Add bone broth to add moisture back to your meat.

  5. Whisk until completely combined. Now, add your shredded cheese and mix. Lastly, add your diced tomatoes.

  6. Place your queso on your baking sheet, top with taco meat and shredded cheese. Then add your onion, tomato and jalapeno and bake for 10-15 minutes until your cheese is fully melted

  7. At this point, I like to throw in my jalapenos into the oven so they get a little roasted.

  8. Pull both out and pour your cheese directly onto your jalapenos!

  9. Add sour cream, guacamole and cilantro and enjoy!
