Ingredients:
4 cups hot cauliflower rice (fresh or frozen, fully heated)
1½–2 cups shredded rotisserie chicken
2 eggs, scrambled
2 green onions, finely chopped (plus more for garnish)
1 tablespoon avocado oil
1 tablespoon chili oil
1½ tablespoons soy sauce
1 tsp sesame oil
Crispy shallots + sesame seeds, for garnish
Directions:
Cook or microwave the cauliflower rice until hot and excess moisture is released. (Tip: sauté briefly to keep it from getting watery.) Make your scrambled eggs on the side.
While the chicken is warm, shred it into bite-size pieces and place in a large bowl.
Add the hot cauliflower rice, chicken juices, scrambled eggs. and chopped green onions to the bowl. Toss gently to combine.
Drizzle in the four season scallion sauce, golden shallot oil, and chili oil. Toss until everything is evenly coated.
Top with sesame seeds and extra green onions. Serve immediately.
