High Protein Tomato Basil Soup

Ingredients

  • 2 tbsp avocado oil

  • 1 small yellow onion, quartered

  • 3 cloves garlic

  • 4 large heirloom or regular tomatoes, quartered

  • 1 tsp Italian seasoning

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • Salt and black pepper, to taste

  • 2 cups Kettle & Fire chicken bone broth

  • 1½ cups cottage cheese

  • ½ cup fresh basil, plus more for topping

  • 1–2 tsp honey or allulose, optional

  • Parmesan, for topping

Instructions

  1. Roast the vegetables: Preheat oven to 425°F. Add the tomatoes, onion, and garlic to a baking sheet. Drizzle with avocado oil and season with Italian seasoning, garlic powder, onion powder, salt, and pepper. Toss to coat.

  2. Roast: Roast for 25–30 minutes, or until the tomatoes are softened and slightly caramelized around the edges.

  3. Blend: Carefully transfer the roasted vegetables to a high-speed blender. Add the bone broth, cottage cheese, and fresh basil. Blend until completely smooth and creamy.

  4. Adjust the flavor: Taste and add additional salt and pepper as needed. If the tomatoes are too acidic, add 1–2 teaspoons of honey or allulose and blend again.

  5. Warm & serve: Pour the soup into a pot and gently warm over low heat if needed. Do not boil, since the cottage cheese has already been blended in.

  6. Top & enjoy: Serve warm topped with Parmesan, fresh basil, and cracked black pepper.
