Creamy Sausage Tortellini Soup

Ingredients:

  • 1 lb Italian sausage (spicy or mild, based on preference)

  • 2 tbsp olive oil

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1/2 tsp red pepper flakes

  • 4 cups chicken broth

  • 1 cup half and half

  • 1/4 cup grated Parmesan cheese

  • 1 package of cauliflower to replace the tortellini (or 2 cups zoodles or other low-carb pasta alternative)

  • 1/2 cup spinach

  • Salt and pepper, to taste

  • Fresh basil or parsley for garnish (optional)

Directions:

  1. Cook the Sausage: In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the Italian sausage, breaking it up into small pieces as it cooks. Once browned and cooked through, remove the sausage from the pot and set it aside.

  2. Sauté the Veggies: In the same pot, add another tablespoon of olive oil. Add the diced onion and cook for 2-3 minutes until softened. Add the minced garlic and red pepper flakes, cooking for another 30 seconds until fragrant.

  3. Add the Broth and Cream: Pour in the chicken broth and bring to a simmer. Once simmering, stir in the heavy cream and grated Parmesan cheese. Let the soup simmer for 5-10 minutes to thicken slightly.

  4. Add the Cauliflower: Add the cauliflower (or your low-carb substitute) to the soup and cook according to package instructions, typically 3-5 minutes, until they are tender and heated through. If using zucchini noodles, add them in the last 2 minutes of cooking.

  5. Finish the Soup: Stir in the cooked sausage and spinach (if using) and cook for an additional 2-3 minutes until everything is heated through and the spinach has wilted.

  6. Season and Serve: Taste and adjust seasoning with salt and pepper. Serve hot, garnished with fresh basil or parsley if desired.
