Mini Onion Boil

 

Servings: 4

Ingredients (serves 3–4)

  • 1–1.5 lbs mini onions (pearl onions or small sweet onions, peeled) or buy frozen bags

  • 6 tbsp butter, melted

  • 1/4 cup chicken bone broth

  • 1–2 tbsp Cajun seasoning or Old Bay-style seasoning or both

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1/2 tsp smoked paprika

  • 1 tsp lemon pepper

  • Juice of 1/2 lemon

  • Salt & pepper to taste

  • 6 hard boiled eggs

  • 2-3 sausages, cut into 2 in pieces

  • 1-2 cooked chicken breasts, cut into strips or diced

Instructions

1. Prep the onions

  • If using pearl onions, blanch briefly (1–2 min) to make peeling easier.

  • Trim ends and remove skins.

2. Parboil (optional but recommended)

  • Boil onions for 8–10 minutes until just tender.

3. Season

  • Drain and toss onions in a bowl with melted butter, olive oil, Cajun seasoning, garlic powder, onion powder, paprika, salt, and pepper.

4. Roast or air fry

  • Oven: 400°F for 25–30 minutes

  • Air fryer: 375°F for 12–15 minutes

  • Shake or stir halfway through

5. Finish with extra lemon juice and toss again so they’re glossy and coated
