Cottage Cheese Beef Bowl

Ingredients

  • 1 medium sweet potato, diced

  • 1 lb ground beef + 1 packet taco seasoning

  • ½–1 cup cottage cheese

  • ½ avocado, sliced

  • 1–2 teaspoons hot honey

  • 1 tablespoon olive or avocado oil

  • Salt and pepper, to taste

  • Red pepper flakes

  • Optional - Pickled onions

  • Optional - Fresh cilantro

Cilantro Lime Crema

Ingredients

  • 1 cup Greek yogurt

  • 1/4 cup avocado mayonnaise

  • 1/4 cup fresh cilantro leaves, packed

  • 1–2 tbsp lime juice (freshly squeezed)

  • 1 garlic clove

  • Salt & pepper, to taste

  • 1–2 tsp water or milk (to thin, if needed)
