Roasted Feta Dip

Ingredients:

  • 1 cup crumbled feta cheese

  • ½ cup roasted red peppers (jarred, drained well)

  • 2 tbsp olive oil

  • 1 tbsp lemon juice

  • 1 clove garlic, minced

  • Pinch of red pepper flakes (optional)

Directions:

  1. Blend all ingredients in a food processor until smooth.

  2. Adjust seasoning with salt, pepper, and a touch more olive oil if too thick.

  3. Serve chilled or at room temperature.
