Crispy Mozzarella Sticks

Ingredients:

  • 8 string cheese sticks (or mozzarella sticks)

  • 8 rice paper sheets

  • 1 cup crushed pork rinds 

  • 2 eggs, whisked  

  • Low sugar marinara sauce for dipping

  • Avocado oil for frying

Directions:

  1. Prep the rice paper: Fill a shallow bowl with warm water. Submerge one rice paper sheet for about 10-15 seconds until soft and pliable. Lay it flat on a clean surface or cutting board.

  2. Wrap the cheese: Place two string cheese sticks near one edge of the softened rice paper (placing two sticks side-by-side helps prevent breakage). Fold in the sides and tightly roll to seal the cheese completely. The rice paper acts like a thin, crispy wrapper.

  3. Seal the edges: To help seal, lightly wet the edge of the rice paper before rolling. Press gently to close any openings.

  4. Repeat: Continue with remaining rice paper sheets and cheese sticks.

  5. Dip your cheese sticks in egg, then coat in the pork rinds.

  6. If airfrying: Preheat your air fryer to 375°F (190°C). Place the wrapped sticks in a single layer in the air fryer basket (avoid overcrowding). Spray the sticks lightly with cooking spray. Air fry for 6-7 minutes, turning halfway through, until the rice paper is golden and crispy and cheese is melted inside.

  7. If shallow frying: add avocado oil to your pan. Working carefully, add your mozzerella sticks to your oil on medium low heat. Don’t overcrowd the pan. Carefully turn, ensuring it gets crispy all the way around.

  8. Serve: Let cool slightly, then serve with warm marinara sauce for dipping.
