Creamy Tuscan Chicken Soup

Ingredients:
2 tbsp avocado oil
2 lbs chicken breast, cut into bite-sized pieces
1 small onion, diced
3 cloves garlic, minced
8 cups chicken bone broth
1 (14 oz) can diced tomatoes
2 cups half & half
½ cup grated Parmesan cheese
3 cups baby spinach
½ cup sun-dried tomatoes (packed in oil, drained & chopped)
1 tsp Italian seasoning
½ tsp red pepper flakes (optional, for heat)
Salt & black pepper, to taste
Directions:
Heat the avocado oil in a large pot over medium heat. Add the chicken, season with salt and pepper, and sauté until golden brown.
Add the onion and garlic to the pot. Cook for about 2 minutes, until fragrant.
Pour in the chicken bone broth, diced tomatoes, sun-dried tomatoes, Italian seasoning, and red pepper flakes. Stir and bring to a gentle simmer.
Reduce heat to medium-low and stir in the half & half and Parmesan cheese until warmed through and creamy.
Add the spinach and cook for 2–3 minutes, until wilted. Adjust seasoning with additional salt and pepper if needed.
Ladle into bowls and garnish with extra Parmesan if desired.
