Garlic Chicken Meal Prep

Ingredients:

Chicken Bites

  • 1 ½ lbs chicken breasts or thighs, cut into 1-inch cubes

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 tsp paprika

  • ½ tsp garlic powder

  • 1 tbsp avocado oil

Garlic Butter Sauce

  • 3 tbsp butter

  • 3–4 cloves garlic, minced

  • ½ tsp Italian seasoning or dried parsley

  • 1 tbsp lemon juice (optional but brightens it)

VEGGIES

  • 12 oz fresh green beans, trimmed or zucchini

  • 1 tbsp avocado oil

  • Salt & pepper to taste

  • Optional: ¼ tsp red pepper flakes

Directions:

1. Heat 1 tbsp olive oil in a large skillet over medium heat. Add green beans, salt, pepper, and optional red pepper flakes. Sauté 5–7 minutes, until crisp-tender. Remove to a plate.

2. In the same skillet, add 1 tbsp olive oil. Season chicken cubes with salt, pepper, paprika, and garlic powder.
Add chicken to the pan in a single layer. Cook 6–8 minutes, stirring occasionally, until golden and cooked through.

3. Reduce heat to low. Add butter, garlic, and Italian seasoning to the chicken. Stir until melted and fragrant, 1 minute. Add lemon juice if using.

4. Return green beans to the skillet. Toss everything together until coated in garlic butter. Serve immediately or portion into meal-prep containers.
