Cottage Cheese Pancakes

Ingredients
1 cup cottage cheese
4 large eggs
2 tablespoons melted butter
1 teaspoon vanilla extract
1 ½ cups blanched almond flour
2 teaspoons baking powder
Instructions
1. Add the ingredients to a blender in this order: cottage cheese, eggs, melted butter, vanilla extract, almond flour, and baking powder. Blend for about 45 seconds until the mixture becomes smooth and the almond flour is fully mixed in. The batter will be fairly thick.
2. Heat a non-stick skillet or griddle over medium heat. Lightly grease it with oil, butter, or cooking spray. Pour about ¼ cup of batter onto the pan and gently spread it into a circle using the back of a spoon.
3. Cook the first side for about 2 minutes, until the edges look set and the pancake lifts easily. Flip and cook the other side for 90 seconds to 2 minutes. Avoid pressing down on the pancakes with the spatula to keep them fluffy. Remove from the pan and repeat with the remaining batter.
4. Enjoy the pancakes warm with your favorite toppings like berries, yogurt, maple syrup, or nut butter.
