3 Ingredient Cloud Bread

Ingredients

  • 3 large eggs

  • ½ cup cottage cheese

  • ¼ tsp baking powder

  • Pinch of salt

  • Optional: ½ tsp garlic powder, Italian seasoning

Instructions

  1. Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper.

  2. Separate the eggs into two bowls (whites in one, yolks in another).

  3. Blend yolks + cottage cheese

    • Add cottage cheese to the egg yolks.

    • Blend or whisk until smooth.

  4. Whip the egg whites

    • Add cream of tartar or baking powder to the egg whites.

    • Beat with a mixer until stiff peaks form.

  5. Fold together gently

    • Slowly fold the yolk mixture into the egg whites.

    • Do not overmix or it will lose the fluffy texture.

  6. Form the bread rounds

    • Spoon the mixture into 6–8 small rounds on the baking sheet.

  7. Bake for 25–30 minutes until golden.

  8. Cool for 5–10 minutes so they firm up.
