Ingredients
3 large eggs
½ cup cottage cheese
¼ tsp baking powder
Pinch of salt
Optional: ½ tsp garlic powder, Italian seasoning
Instructions
Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper.
Separate the eggs into two bowls (whites in one, yolks in another).
Blend yolks + cottage cheese
Add cottage cheese to the egg yolks.
Blend or whisk until smooth.
Whip the egg whites
Add cream of tartar or baking powder to the egg whites.
Beat with a mixer until stiff peaks form.
Fold together gently
Slowly fold the yolk mixture into the egg whites.
Do not overmix or it will lose the fluffy texture.
Form the bread rounds
Spoon the mixture into 6–8 small rounds on the baking sheet.
Bake for 25–30 minutes until golden.
Cool for 5–10 minutes so they firm up.
