Cabbage Detox Soup

Time: 45 minutes
Ingredients
2 tbsp avocado or olive oil
1 medium yellow onion, diced
4 cloves garlic, minced
2 large carrots, cut in 1 in chunks
3 celery stalks, cut in 1 inch chunks
½ head green cabbage, chopped
1 (14.5 oz) can diced tomatoes
6 cups chicken broth
1 tsp Italian seasoning
1 tsp paprika
½ tsp black pepper
1 tsp salt (or to taste)
2 tbsp fresh lemon juice
2 tbsp chopped fresh parsley
2 cups shredded cooked chicken
1–2 cups spinach or kale
Red pepper flakes for a little heat
Instructions
Heat the olive oil in a large pot over medium heat.
Add the onion, carrots, and celery. Cook for about 5–7 minutes until softened.
Stir in the garlic and cook for 30 seconds.
Add the cabbage, diced tomatoes, broth, Italian seasoning, paprika, salt, and pepper.
Bring to a boil, then reduce to a simmer for 20 minutes. Add your chicken if desired
Cook for another 10–15 minutes until all the vegetables are tender.
Remove from the heat and stir in the lemon juice and fresh parsley.
Taste and adjust the seasoning before serving.
