100 Calorie Crustless Cheesecake
Yields: 8 slices
Ingredients:
1.5 cups nonfat greek yogurt
8 oz low fat cream cheese
1 cup powdered allulose or sweetener of choice
2 eggs
½ tsp vanilla extract
1 tsp lemon juice
Optional - 1 tsp xanthan gum or cornstarch if you’re using sugar free honey or maple syrup

Directions:
Preheat oven to 350F
In a large bowl, add all of your ingredients together and whip until combined.
Place your batter in cupcake liners or an 8” round cake pan with parchment paper.
Bake for 25-30 minutes until a toothpick comes out clean!
Enjoy with fruit or whipped cream!
