Chicken Parmesan (Lighter Version)
Servings: 4
Ingredients:
- 2 chicken breasts, fileted or cut in half lengthwise 
- 2 cups broccoli, chopped into pieces 
- ½ tsp garlic powder 
- ½ tsp onion powder 
- Salt and pepper to taste 
- ½ cup mozzarella cheese 
- 1 jar low sugar marinara 
- Top with parsley 
Directions:
- Preheat oven to 375F. 
- Cook your chicken breast on a cast iron pan or skillet over medium high heat. 
- Add your garlic powder, onion powder, salt and pepper and cook until it’s almost fully cooked. 
- Add your chopped broccoli and saute. 
- Now, add your marinara sauce on top of the broccoli and chicken. 
- Top with mozzarella cheese and bake for 15-30 minutes (depending on how small you cut your broccoli, you may need to cook for longer). 
- You can serve this with some cauli rice or enjoy it on its own!
