Microwavable Pumpkin Spice Cake

 
 

Servings: 2

Ingredients:

  • 2 tbsp melted butter 

  • 4 tbsp pumpkin puree

  • 2 large egg

  • 3 tbsp coconut flour

  • 2 tbsp sweetener of choice

  • 1 tsp baking powder

  • 1 tsp pumpkin pie spice

  • 4 tbsp cream cheese, softened  

  • 2 tbsp powdered sweetener 

  • 2 tbsp almond milk

Directions:

  1. Melt your butter and add everything in a microwave safe container. 

  2. Microwave for 2 minutes and allow to cool. 

  3. As your cake is cooling, make your cream cheese frosting!

  4. Top your cake and garnish with any additional toppings!

  5. Slice and enjoy!
