Viral La Scala Chopped Salad

 

Ingredients

Salad

  • 1 head iceberg lettuce, finely chopped

  • 1 head romaine lettuce, finely chopped

  • 1 can chickpeas, drained and rinsed

  • 1/4–1/2 lb salami, thinly sliced into strips

  • 1 cup shredded mozzarella cheese

  • 1–2 cups shredded chicken

  • 3-4 boiled eggs, chopped

Dressing

  • 1/3 cup olive oil

  • 3 tbsp red wine vinegar

  • 1 tsp Dijon mustard

  • 1 garlic clove, minced

  • Salt + black pepper to taste

Instructions

  1. Finely chop the lettuce so everything is small and scoopable.

  2. Add chickpeas, salami, mozzarella, eggs, and shredded chicken. 

  3. Whisk together all dressing ingredients until emulsified.

  4. Toss everything together until evenly coated.

  5. Chill for 10–15 minutes before serving for the best flavor.

Low Carb Swap

To make it more low carb:

  • Replace chickpeas with chopped cucumbers or pepperoncini

  • Use turkey salami for higher protein/lower fat
