Veggie Frittatas

 
 

Servings: 4

Ingredients:

  • 4 eggs 

  • ¼ cup bell pepper, diced 

  • 2 tbsp onion, diced 

  • ¼ cup Mexican blend cheese (or mozzarella) 

  • ½ cup spinach 

  • Seasonings of choice (salt, pepper, chili powder, onion powder)

Directions:

  1. Preheat oven to 375F.

  2. In a large mixing bowl, add all of your ingredients and mix 

  3. Pour into mini muffin pans and bake for 15-20 mins 

  4. Remove from pan, allow to cool and enjoy!
