Nati's Weight Loss Power Bowl

 

Serves: 1 bowl

Taco Meat

  • ½ lb lean ground beef or turkey

  • ½ tsp onion powder

  • ½ tsp garlic powder

  • ½ tsp paprika

  • ½ tsp chili flakes

  • Salt & pepper, to taste

  • 2 tbsp water

To make:
Brown the ground meat in a skillet over medium-high heat, breaking it apart as it cooks. Drain if needed. Add all seasonings and water, then reduce heat and simmer for 2–3 minutes, stirring until the meat is well coated.

Use ½ of the cooked taco meat for your bowl. Save the rest for another meal.

Bowl Ingredients

  • ½ cup prepared taco meat

  • 2 eggs

  • ½ avocado

  • ½ cup mushrooms, sliced

  • ¼ cup onion, sliced

  • ½ cup cottage cheese

  • Hot sauce, to taste

  • 1 tsp avocado or olive oil

  • 1 tsp lime juice

  • Optional: cilantro, jalapeño, pico de gallo

Directions

  1. Make the avocado spread:
    Mash the avocado with lime juice and a pinch of salt

  2. Sauté the vegetables:
    Heat oil in a skillet over medium-high heat. Add onions and mushrooms. Cook for 5–7 minutes, until nicely browned.

  3. Scramble the eggs:
    Push the vegetables aside and add the eggs. Scramble until just cooked, then season with salt and pepper.

  4. Warm the taco meat:
    Add your prepared taco meat to the skillet and heat through.

  5. Build the bowl:
    Add the avocado spread to the bottom of the bowl. Top with taco meat, scrambled eggs, and sautéed mushrooms and onions.

  6. Add the cottage cheese:
    Spoon the cottage cheese on top and finish generously with hot sauce.

  7. Finish:
    Add cilantro, jalapeño, pico de gallo, or a squeeze of lime if desired.
