Stuffed Baked Salsa Chicken
Servings: 4
Ingredients:
2 large chicken breast, cut into halves
1.5 cups chunky low carb salsa
1 cup shredded cheddar cheese
2 tbsp taco seasoning (or 1 packet)
Salt and pepper to taste
Garnish
1 avocado, sliced
Cilantro
Directions:
Preheat your oven to 375F.
Season your chicken breasts with salt and pepper and taco seasoning.
Saute your chicken breasts for 4-5 mins on each side. This is just to get a golden brown color!
Using a casserole dish, add your salsa to the bottom and place your half cooked chicken breasts on top.
Bake for 20 mins until your chicken is fully cooked. Allow to cool and serve with avocado or a side of rice!
