Strawberry Sago (Lighter Version!)

 
 

Ingredients:

  • 1 cup small tapioca pearls

  • 1/2 cup low carb condensed milk (recipe linked here)

  • 1 can evaporated milk

  • 3-4 tbsp sweetener of choice to bring it to your desired sweetness! (You can use honey, monkfruit etc!)

  • 1 cup green grapes

  • 1/2 cup coconut chunks

  • 1 pound fresh strawberries, diced

Homemade Strawberry Almond Milk:

  • 1 cup unsweetened almond milk

  • 10 fresh strawberries

Directions:

  1. Bring a pot of water to a rolling boil. Add your tapioca pearls and stir constantly until the balls become little bubbles and translucent.

  2. While that’s boiling, make your strawberry almond milk by adding strawberries and almond milk to a blender and set aside!

  3. Rinse the starch out of the tapioca pearls with cold water and place in your large bowl.

  4. Add your diced strawberries, coconut chunks, green grapes, evaporated milk, strawberry almond milk, condensed milk and mix!

  5. Taste to adjust the sweetness levels to your liking and finish it off with ice because this dish is best served cold!

  6. Refrigerate for a couple hours-overnight and enjoy!
