Sloppy Joe Skillet
Servings: 6
Ingredients:
- 1 lb ground beef 
- 1 tablespoon avocado oil 
- 1 small onion, diced 
- 2 garlic cloves, minced 
- 1 cup diced zucchini 
- 1 cup sliced mushrooms 
- ½ cup red bell pepper, diced 
- 1 cup no-sugar-added marinara sauce 
- 1 cup beef bone broth 
- 1 packet sloppy joe seasoning 
- Salt and pepper, to taste 
- ¼ cup freshly grated mozzarella cheese 
Directions:
- In a large sauce pan, add your avocado oil and ground beef. Cook ground beef until it’s about ¾ of the way done (about 5 mins) on medium high heat. 
- Add in your onion, garlic, bell peppers and saute with ground beef until translucent and fully cooked (about 3 more minutes). 
- Now, add your zucchini and mushroom and saute. 
- Add your sloppy joe seasoning packet, salt and pepper. 
- Mix until the seasonings are combined. 
- Add your marinara sauce and beef bone broth and simmer until the skillet has thickened. 
- Top with mozzarella cheese and enjoy! You can serve it with a side salad.
