Skinny Chicken Enchilada Casserole

Ingredients:
- 1 lb shredded chicken 
- 10 oz riced cauliflower 
- 10 oz red or green enchilada sauce 
- ½ cup Mexican blend cheese, shredded 
- 2 low carb tortillas 
- 1 tsp garlic powder 
- 1 tsp onion powder 
- Optional - ½ tsp red pepper flakes or cumin 
Toppings:
- Cilantro 
- Green onion 
- Sour cream 
Directions:
- Preheat your oven to 375F. 
- Using a 8x8 dish or square pan, add your riced cauliflower, seasonings, tortillas, chicken and enchilada sauce. 
- Top with Mexican blend cheese and bake for 20 mins until nice and cheesy. 
- Serve with cilantro, sour cream, guacamole and enjoy!
