10 oz riced cauliflower
10 oz red or green enchilada sauce
½ cup Mexican blend cheese, shredded
2 low carb tortillas
1 tsp garlic powder
1 tsp onion powder
Optional - ½ tsp red pepper flakes or cumin
Toppings:
Cilantro
Green onion
Sour cream
Directions:
Preheat your oven to 375F.
Using a 8x8 dish or square pan, add your riced cauliflower, seasonings, tortillas, chicken and enchilada sauce.
Top with Mexican blend cheese and bake for 20 mins until nice and cheesy.
Serve with cilantro, sour cream, guacamole and enjoy!
