Mom’s Green Mexican Salsa

Servings: 6

Ingredients:

  • 6-8 tomatillos husked and washed

  • 2 cloves garlic

  • 2 large jalapeño or 4 small ones

  • Salt to taste

  • 3-4 tbsp cilantro, chopped

  • 2 cups water (or enough to fill up pot)

Directions:

  1. In a saucepan, bring your water to a boil. Add the peppers and tomatillos, and boil uncovered, for about  10 minutes, until they change color. 

  2. Drain your vegetables,, reserving about ¼ cup water of the liquid.

  3. In a blender, puree the peppers, tomatillos, garlic and  the cilantro if using, then add the reserved liquid if needed to get a thinner consistency..

  4. Transfer to a bowl and add salt to taste.

Mom’s Red Mexican Salsa

INGREDIENTS:

  •  6 medium size roma tomatoes 

  •  2 large jalapenos or 4 small ones

  •  2 cloves garlic

  •  1 tbsp salt

DIRECTIONS:

  1. On a comal, or cast iron pan, char your vegetables until they are blistered (tomatoes, jalapenos, garlic)

  2. Place your items in a blender or food processor until desired consistency!

  3. Season along the way - I used salt.  At this point, you can use water to thin out if needed! 

  4. Serve with chips and enjoy!
