Low Carb Lemon Loaf Pound Cake

 
 

Servings: 7 slices

Ingredients:

  • 2 cups almond flour 

  • ½ cup allulose

  • 1 tbsp baking powder

  • 1/2 tsp salt

  • 2/3 cup greek yogurt 

  • 1/4 cup lemon juice

  • 3 eggs 

  • 1 tbsp lemon zest

  • Butter for greasing

Yogurt Frosting:

  • 1 cup high protein vanilla yogurt 

  • 2 tsp lemon juice 

  • Zest of one lemon

Directions:

  1. Preheat your oven to 350F.

  2. In a large mixing bowl, add all of your ingredients and mix until combined.

  3. Spray or grease your pan with avocado oil spray or line with parchment paper. 

  4. Pour your batter into your prepared dish.

  5. Bake for 45 minutes, covering your loaf with foil halfway through if it starts to brown too quickly. 

  6. Remove from the oven and allow to cool completely, while you make your frosting. 

  7. After about 20 mins, add your frosting onto your cooled loaf and  serve!
