Loaded Cauliflower Salad
Servings: 6
Ingredients:
- 1 lb cauliflower florets 
- 2 tbsp avocado oil - if roasting 
- ¼ cup avocado mayo 
- ¼ cup sour cream 
- 1 tbsp apple cider vinegar or pickle juice 
- 2 tbsp yellow mustard 
- 1 tbsp sweetener or Choczero sugar free honey 
- 4-5 strips bacon, cooked and cut into strips 
- ½ cup cheddar cheese, shredded 
- 2 sprigs, green onion, diced 
- Salt and pepper to taste 
Directions:
- Steam or roast your cauliflower. Your cauliflower should be fork tender. 
- In a large bowl, make your dressing by adding your mayo, sour cream, apple cider vinegar, mustard, sweetener and salt and pepper. Mix. 
- Make your salad by adding your cauliflower, bacon and shredded cheese. 
- Dress and top with green onions!
