Loaded Cauliflower Salad
Servings: 6
Ingredients:
1 lb cauliflower florets
2 tbsp avocado oil - if roasting
¼ cup avocado mayo
¼ cup sour cream
1 tbsp apple cider vinegar or pickle juice
2 tbsp yellow mustard
1 tbsp sweetener or Choczero sugar free honey
4-5 strips bacon, cooked and cut into strips
½ cup cheddar cheese, shredded
2 sprigs, green onion, diced
Salt and pepper to taste
Directions:
Steam or roast your cauliflower. Your cauliflower should be fork tender.
In a large bowl, make your dressing by adding your mayo, sour cream, apple cider vinegar, mustard, sweetener and salt and pepper. Mix.
Make your salad by adding your cauliflower, bacon and shredded cheese.
Dress and top with green onions!
