Chicken Pesto Pasta Salad

 
 

Servings: 6

Ingredients:

  • 1 lb chicken, cubed or sliced 

  • 1 cup homemade or store bought pesto 

  • 1 box low carb pasta, cooked and cooled (Kaizen)

  • ½ cup grape tomatoes, cut in halves 

  • ¼ cup parmesan shavings

  • ¼ cup mozzarella balls 

  • 4-5 basil leaves  

  • 1 tbsp lemon juice 

  • Salt and pepper to taste

Directions:

  1. If you haven’t already, cook your pasta as per box instructions

  2. In a large bowl, add all of your ingredients and mix. 

  3. Cover and place in the fridge until ready to serve!
