Keto Lemon Mug Cake
I'm the biggest lemon lover, and when I say that this is the BEST lemon mug cake, I've ever made...I couldn't wait but share!!
Keto Lemon Mug Cake with Lemon Glaze Recipe:
Ingredients:
Lemon Mug Cake:
- 1 tbsp butter, melted 
- 3 tbsp almond flour, packed 
- ½ tsp baking powder 
- 1 tbsp sweetener (use your sweetener of choice, I used granular monkfruit in this one) 
- 3 tbsp egg whites (OR 1 egg white) 
- 1 tsp lemon juice 
- 1/8-1/4 tsp lemon zest 
Lemon Glaze:
- 1 tbsp cream cheese, softened 
- 1 tbsp powdered sweetener (you can use granular too) 
- 1 tbsp heavy cream 
- 1 tsp lemon juice 
- 1/8 tsp lemon zest (if you want hints of lemon, use less zest) 
Directions:
- Add ingredients for mug cake into a mug, mix thoroughly and microwave for 1 min 20 secs! 
- For the glaze, mix until well combined!
