Ingredients
8 large eggs
2 cups cottage cheese, drained
½ cup feta cheese
1 cup shredded mozzarella
1 cup red bell pepper, diced
2 cups fresh spinach
½ tsp salt
½ tsp pepper
Instructions
Preheat oven to 350°F (175°C).
Whisk eggs, cottage cheese, feta cheese, salt & pepper.
Fold in veggies and cheese.
Pour into greased 9x13 dish.
Bake 35–40 minutes until set.
