High Protein Spinach Feta Breakfast Casserole

Ingredients

  • 8 large eggs

  • 2 cups cottage cheese, drained 

  • ½ cup feta cheese 

  • 1 cup shredded mozzarella

  • 1 cup red bell pepper, diced  

  • 2 cups fresh spinach

  • ½ tsp salt

  • ½ tsp pepper

Instructions

  1. Preheat oven to 350°F (175°C).

  2. Whisk eggs, cottage cheese, feta cheese, salt & pepper.

  3. Fold in veggies and cheese.

  4. Pour into greased 9x13 dish.

  5. Bake 35–40 minutes until set.
