Creamy Jalapeno Popper Dip

 

Ingredients (serves 6)

  • 2 cups shredded chicken

  • 1/2 cup pickled jalapeños, chopped

  • 1/2 cup roasted corn (optional)

  • 1/2 cup shredded cheddar cheese

  • 1/2 cup lite mozzarella cheese

  • 2 cups half and half

  • 4 oz cream cheese, softened

  • 1 tsp paprika

  • 1 tsp garlic powder

  • Salt and pepper, to taste

Toppings

  • Bacon crumbles

  • Green onion, sliced

Instructions

  1. In a large saucepan or Dutch oven over medium heat, add the half-and-half and cream cheese. Whisk until the cream cheese is fully melted and incorporated.

  2. Stir in the paprika, garlic powder, salt, and pepper.

  3. Add the shredded chicken, jalapeños, and roasted corn.

  4. Simmer gently for 5–10 minutes, stirring occasionally.

  5. Add the cheddar and mozzarella cheeses and stir until melted and smooth.

  6. Taste and adjust seasoning as needed.

  7. Serve hot and top with bacon crumbles and chopped green onions.
