Asian Style Fish One Pan Meal

Ingredients:
4 fish filets - I used barramundi
2 tbsp coconut aminos
2 tbsp Choczero sugar free maple syrup
2 garlic cloves
1 tsp sriracha
½ tsp ground ginger
Asparagus, sliced in chunks
Zucchini, sliced
Eggplant, sliced
Avocado oil spray
Salt and pepper to taste
Chopped cilantro for garnishing
Directions:
Preheat oven to 425F.
In a medium sized mixing bowl add the fish, coconut aminos, maple syrup, garlic, ginger, and sriracha!
Mix until the fish is well coated in the marinade.
Add the chopped zucchini and eggplant onto a parchment lined baking sheet.
Spray with avocado oil and season with salt, pepper, and garlic powder
Bake for your veggies for 10 mins at 425F first, then add your fish and finish for the last 10 mins (this helps you not overcook your fish!
