Mediterranean Style Chicken One Pan Meal

Ingredients:
6 bone-in chicken thighs
¼ cup unsweetened greek yogurt
1 lemon, juiced
1 tsp chili powder
1 tsp paprika
½ tsp cumin
½ tsp oregano or italian seasoning
Salt and pepper to taste
Cauliflower florets
Broccoli florets
Avocado oil spray
Directions:
Preheat your oven to 425F.
In a large mixing bowl, add the chicken (patted dry), avocado oil, Greek yogurt, lemon juice, chili powder, paprika, cumin, oregano, salt, and pepper
Toss everything together until the chicken is well coated in the marinade.
Add the chicken and veggies onto a baking sheet lined with parchment paper.
Spray some avocado oil on the veggies and season with salt and pepper!
Bake at 425F for 35-45 minutes and enjoy! You want your chicken to reach an internal temperature of 165F.
