Veggie Microwave Omelette
Ingredients:
2 eggs
2 tbsp milk or water
2 tbsp diced bell peppers
1 tbsp diced mushrooms
1 tbsp chopped spinach or kale
1 tbsp shredded cheese (optional)
Salt & pepper to taste
Directions:
In a microwave-safe mug or bowl, spray the mug with oil first for easy cleanup.
Whisk the eggs and milk.
Stir in veggies, cheese, salt, and pepper.
Microwave on high for 2 minutes, stir, then cook for another 30–60 seconds, until eggs are set.
Let sit for 30 seconds before eating.
Jersey Mikes Copycat Salad
Ingredients:
4 slices of deli turkey (nitrate-free if possible)
2 slices of cheese (cheddar, Swiss, or provolone work well) or cream cheese
¼ cup cherry tomatoes, halved
¼ cucumber, diced
¼ cup pepperoncinis
3-4 leaves of romaine lettuce
2 tbsp avocado mayo
1-2 tbsp Red wine vinegar
Drizzle of olive oil
Salt and pepper
Directions:
Place all of your salad ingredients in a bowl, starting with your lettuce at the bottom.
Dress with red wine vinegar, olive oil and salt and pepper.
Toss and enjoy!
Mediterranean Power Bowl
Ingredients:
½ cup cottage cheese
5-6 cherry tomatoes (halved)
¼ cup cucumber (diced)
¼ cup kalamata or black olives (sliced)
Drizzle of olive oil
Pinch of dried oregano
2 tbsp feta cheese
Salt and pepper to taste
Directions:
Add cottage cheese to a bowl.
Top with tomatoes, cucumber, olives and feta!
Drizzle with olive oil and sprinkle oregano
