Starbucks Lemon Loaf
Ingredients:
1.5 cups of almond flour sifted
6 tablespoons of protein powder
3.5 tablespoons of avocado oil
1 1/2 teaspoon of baking powder
3 eggs
6 tablespoons of sweetener
2 tbsp lemon juice
Zest of 2 small lemons
Optional - ½ tsp lemon extract
Pinch of salt
Lemon Glazing
1 cup sugar free powdered sweetener (I used allulose)
2 tbsp lemon juice
Optional - lemon zest
Directions:
Preheat oven to 350 degrees Fahrenheit.
Prepare loaf pan with parchment paper and foil.
Add all ingredients to a bowl and mix well.
Pour batter into prepared pan.
Bake at 350F for 15 mins, then turn oven down to 325F, cover loosely with foil and bake an additional 30 minutes or until a toothpick comes out clean. You don’t want it to get too brown.
