Scalloped Potatoes

 
 

Servings: 6

Ingredients:

  • 2 turnips, sliced thinly with a mandoline  

  • 1 cup heavy cream

  • 1 cup unsweetened almond milk 

  • ½ cup parmesan cheese 

  • 1 cup cheddar cheese 

  • 1 tsp garlic powder

  • 1 tsp onion powder 

  • ½ tsp xanthan gum 

  • 1 tsp paprika 

  • Extra cheddar cheese for topping 

  • Salt and pepper to taste

Directions:

  1. Preheat your oven to 375F.

  2. Using a potato peeler, peel your turnips and slice into ¼ inch thick. You want these to be as uniform as possible.

  3. In a saucepan, turn it on medium high heat and add your heavy cream, almond milk, onion powder, garlic powder and xanthan gum.  Now add your cheeses and whisk until your cheese sauce has come together.

  4. Prep your baking dish - Layer your sliced turnips and add your sauce on top. 

  5. Add additional cheddar cheese on top and bake for 30-35 minutes. Broil for 2-3 minute at the end to make sure your cheese is nice and bubbly!
