Ingredients:
Noodles:
4 medium zucchini
Shrimp:
1lb of Shrimp
1 tablespoon of olive oil
1 ½ tablespoons of minced garlic
Salt
½ teaspoon of red pepper flakes
¼ cup of white wine
Lemon zest
3 tablespoons of lemon juice
3 tablespoons of fresh parsley chopped
Directions:
Spiral zucchini and place in a container, sprinkled with sea salt.
Heat the butter and olive oil in a large skillet over medium-low heat.
Add the garlic and cook for 30 seconds.
Add the shrimp, salt, red pepper flakes, and black pepper. Sauté until the shrimp is beginning to cook but is still somewhat translucent.
Add the white wine, lemon zest, and lemon juice. Bring to a boil and cook for 1 minute.
Squeeze noodles in a cheese cloth or paper towel to get most of the moisture out.
Stir in the zucchini noodles and parsley.
