Keto Red Velvet Mug Cake

Red Velvet has always been my favorite cake, and I'm so happy to be able to share this recipe with you today!

Ingredients:

Mug Cake Ingredients:

  • 3 tbsp almond flour, packed (make sure you measure this packed and not loose or your cake will be too wet)

  • 1 tbsp butter

  • 1 tbsp sour cream

  • 1 egg

  • 1 ½ tbsp sweetener (I used granular monkfruit)

  • 1 tsp cocoa powder, unless you LOVE chocolate like me, then add 2 tsp

  • ¼ tsp red coloring optional

  • ½ tsp baking powder

  • Optional: 1/2 tsp vanilla

Cream Cheese Frosting:

  • 2 tbsp cream cheese, softened

  • 1 tbsp butter, softened

  • 1/4 tsp heavy cream

  • 4-5 tsp powdered sweetener

  • Dash of salt

Directions:

  1. Melt your butter in your mug and add in all of your wet ingredients (sour cream, egg, vanilla extract)

  2. Now, mix your dry ingredients together in a bowl (cocoa powder, sweetener, baking powder, almond flour)

  3. Add your dry ingredients into your wet ingredients in a mug. Mix thoroughly.

  4. Add your food coloring and mix thoroughly.

  5. Microwave for 60 seconds.

  6. Take your cake out and let it cool completely for 5-10 minutes while you make your frosting now.

  7. Add all frosting items into a bowl and whip until it reaches a thick whipped cream consistency.

  8. Make sure your cake is cool, add frosting on cake and enjoy!
