Chunky Mango Salsa

Ingredients:
1 medium to large ripe mango, diced into baby squares
1 jalapeno, deseeded and chopped
¼ cup red onion, chopped
¼ cup cucumber, chopped (optional)
¼ cup cilantro, chopped
1 ripe avocado, diced
3 tbsp lime juice
3 tbsp olive oil
Pinch of salt
Optional: 1 salmon fillet (seasoned however you like)
Directions:
Chop all of the ingredients that need to be chopped or diced.
Add the mango, jalapeno, onion, cilantro, and avocado to a bowl. Mix everything together.
Add in all of your dressing ingredients including olive oil, lime juice, and salt.
Toss everything together and enjoy with your protein of choice or low carb tortilla chips to dip with!
