Cheesy Chicken Broccoli Rice Casserole

Ingredients:

Chicken

  • 2 cups cooked chicken, shredded or diced

  • 3 cups broccoli florets, chopped small

  • 1 tbsp olive oil

  • 1 sprig green onion, chopped  

  • ½ cup onion, finely diced

  • 2 cloves garlic, minced

  • ½ tsp paprika

  • ½ tsp salt, or to taste

  • ¼ tsp black pepper

  • 1 cup shredded cheddar cheese

  • ½ cup shredded mozzarella

  • 8 oz cream cheese, softened

  • ⅓ cup half and half

Topping

  • ½–1 cup shredded cheddar or cheddar/mozzarella blend

  • Optional: crushed pork rinds for a crunchy topping

Directions:

  1. Heat oven to 375°F (190°C) and grease a medium casserole dish.

  2. In a large bowl, add all of your ingredients and mix.

  3. Transfer the mixture to the casserole dish.

  4. Top with shredded cheese (and pork rinds if using).

  5. Bake 20–25 minutes, until hot, bubbly, and slightly golden.

  6. Let rest 5 minutes before scooping or slicing.
