Cheesy Chicken Casserole
Servings: 4
Ingredients:
- 1.5 cups broccoli, cut into small pieces 
- 2 cups cooked chicken breast, diced or you can use rotisserie chicken 
- 1 cup queso 
- ½ cup almond milk 
- ½ cup cheddar cheese 
- ¼ cup mozzarella cheese 
Directions:
- Preheat oven to 375F. 
- In a large saute pan, add a tbsp of avocado oil and add your broccoli. Season with salt and pepper. And cook until it’s half cooked. You can also steam your broccoli. 
- Place broccoli into a casserole dish and add in your cooked chicken breast, queso or cheese sauce and almond milk and mix. 
- At this point, you can season it more with onion and garlic powder. 
- Top with cheese and bake until golden brown - about 15 minutes. 
- Garnish with green onion, or toppings of choice and enjoy!
