Cheesy Chicken Casserole
Servings: 4
Ingredients:
1.5 cups broccoli, cut into small pieces
2 cups cooked chicken breast, diced or you can use rotisserie chicken
1 cup queso
½ cup almond milk
½ cup cheddar cheese
¼ cup mozzarella cheese
Directions:
Preheat oven to 375F.
In a large saute pan, add a tbsp of avocado oil and add your broccoli. Season with salt and pepper. And cook until it’s half cooked. You can also steam your broccoli.
Place broccoli into a casserole dish and add in your cooked chicken breast, queso or cheese sauce and almond milk and mix.
At this point, you can season it more with onion and garlic powder.
Top with cheese and bake until golden brown - about 15 minutes.
Garnish with green onion, or toppings of choice and enjoy!
