5 Min Green Chile Egg Skillet
Today, I'm making a super easy meal that took me 5 minutes from start to finish! I love making things on the fly from things in my pantry. This is amazing, and almost reminds me of shakshuka.
Servings: 2
Ingredients:
1.5 cups Green Enchilada Sauce
4 Eggs
Cheese of Choice (I used monterey jack and Mexican cheese blend)
1 tbsp avocado oil
1/4 tsp Knorr Chicken Powder (https://amzn.to/2SoB1IS)
Option: 1/4 cup diced onion and cilantro
Directions:
Cut up onion, and add to a frying pan with oil. Cook until translucent on medium.
Add in enchilada sauce and season with Knorr Chicken Powder (https://amzn.to/2SoB1IS)
Add in eggs and then cheese of choice.
Cover with lid and let cook for 1 minute.
Top with more cheese and garnish with cilantro. Enjoy!

These crispy rangoons are a lighter twist with all the creamy, savory goodness and none of the heavy frying. Softened rice paper wraps a simple filling of cream cheese, crab, and green onion, then crisps up beautifully with just a light spray of oil. They’re quick to assemble, easy to cook, and perfect as an appetizer, snack, or party bite—especially with a dipping sauce on the side.
This wonton-inspired chicken soup is cozy, nourishing, and deceptively simple. Fragrant ginger, garlic, and onion simmer in rich bone broth to create a deeply savory base, while tender spoon-dropped “wontons” cook directly in the soup, soaking up all that flavor without any fussy folding. Baby bok choy adds freshness and crunch, and a drizzle of chili oil at the table brings just the right amount of heat. It’s the kind of soup that feels comforting and restorative, equally perfect for a quiet weeknight or feeding a table full of people who need something warm and satisfying.
This cabbage noodle bake is a lighter, cozy twist on classic lasagna—no pasta required. Tender cabbage leaves stand in for noodles, layered with a simple garlicy meat sauce, a creamy ricotta filling, and plenty of cheese (measured with your heart). It’s comforting, satisfying, and the kind of dish that feels both nostalgic and a little bit clever—perfect for when you’re craving something warm and familiar, but a touch lighter.
This creamy Tuscan-style chicken soup is rich, comforting, and packed with protein. Tender bites of chicken simmer in savory bone broth with garlic, Italian herbs, sun-dried tomatoes, and a hint of heat, then finished with half & half, Parmesan, and fresh spinach for a velvety, restaurant-quality finish. It’s cozy enough for a chilly night yet simple enough for a weeknight dinner—and tastes even better the next day.
This low carb garlic chicken is packed with rich, savory flavor and cooks up perfectly for stress-free meal prep all week long. It’s so simple but delicious!
