3 Ingredient Shortbread Cookies
Yields: 8 cookies
Ingredients:
1 ½ cup almond flour
¼ cup sweetener
¼ cup melted butter or coconut oil
Optional - Pinch of sea salt
Optional - ½ tsp vanilla extract
Directions:
Preheat your oven to 350F. Line a large baking sheet with parchment paper.
In a large bowl, combine all of the ingredients and stir until combined. The dough will come together.
Shape dough into balls and space your cookies 2 inches apart. Using a fork, form a criss cross pattern or just flatten with a spoon.
Bake for 10 minutes until golden brown.
Remove from the oven and cool for 10 minutes. They will feel a little bit soft, but will get firmer as it cools.
