2 Ingredient Fried Zucchini Chips
Yields: 30 chips
Ingredients:
1 zucchini, sliced
½ cup freshly grated parmesan cheese
Salt and pepper to taste
Seasonings of choice - ½ tsp garlic powder, ½ tsp onion powder, italian seasoning
Ranch for dipping
Directions:
Preheat oven to 400F
Slice your zucchini on a mandoline (about ¼ inch thick)
Line your baking tray with parchment paper and top with cheese.
Add your zucchini slices on top.
Season with salt and pepper or any additional seasonings making sure you coat everything evenly.
Add a small layer of parm right on top.
Bake for 20 minutes until golden brown. Allow it to cool (this will give the crisp)
Serve with your favorite dipping sauce!
