2 Ingredient Cobbler

Ingredients
20 oz frozen mixed berries
2 packages refrigerated sugar-cookie dough or low carb sugar cookie dough (recipe below)
Serve with vanilla ice cream of choice!
Low Carb Sugar Cookie Dough
Makes: about 9 cookies
Ingredients
1 cup blanched almond flour
½ cup powdered allulose
¼ cup unsalted butter, softened
1 egg yolk
½ tsp vanilla extract
¼ tsp baking powder
Pinch of salt
Directions
Heat oven to 350°F.
Pour the frozen berries into a 9-inch pie dish or 8×8 baking dish.
If you’re making your cookie dough – Beat the softened butter and sweetener together for 1–2 minutes until creamy. Mix in the egg and vanilla.
Add almond flour, baking powder and salt. Mix until a soft dough forms.
Scoop into balls and flatten slightly and place pieces of cookie dough evenly over the berries. If you are using pre-made cookie dough, go ahead and just place on your frozen berries.
Bake 15-20 minutes.
Pull it out and gently flatten the cookie dough with the back of a spoon so it spreads over more of the berries. This is a useful trick from recipe testing that makes the topping crispier.
Bake another 13–15 minutes, until golden and bubbling.
Let it cool for a few minutes and serve warm.
