2 Ingredient Cobbler

Ingredients

  • 20 oz frozen mixed berries

  • 2 packages refrigerated sugar-cookie dough or low carb sugar cookie dough (recipe below)

  • Serve with vanilla ice cream of choice!

Low Carb Sugar Cookie Dough 

Makes: about 9 cookies

Ingredients

  • 1 cup blanched almond flour

  • ½ cup powdered allulose 

  • ¼ cup unsalted butter, softened

  • 1 egg yolk

  • ½ tsp vanilla extract

  • ¼ tsp baking powder

  • Pinch of salt

Directions

  1. Heat oven to 350°F.

  2. Pour the frozen berries into a 9-inch pie dish or 8×8 baking dish.

  3. If you’re making your cookie dough – Beat the softened butter and sweetener together for 1–2 minutes until creamy. Mix in the egg and vanilla.

  4. Add almond flour, baking powder and salt. Mix until a soft dough forms.

  5. Scoop into balls and flatten slightly and place pieces of cookie dough evenly over the berries. If you are using pre-made cookie dough, go ahead and just place on your frozen berries. 

  6. Bake 15-20 minutes.

  7. Pull it out and gently flatten the cookie dough with the back of a spoon so it spreads over more of the berries. This is a useful trick from recipe testing that makes the topping crispier.

  8. Bake another 13–15 minutes, until golden and bubbling.

  9. Let it cool for a few minutes and serve warm.
