Mediterranean Chicken Kebabs
Ingredients:
Chicken Marinade:
2 chicken breasts, cut into large cubes
½ cup greek yogurt
½ tsp garlic powder
½ tsp onion powder
½ tsp cumin
1 tsp paprika
1 tsp turmeric
Salt and pepper to taste
Assembly:
Chicken breast
Red onion
Bell pepper
Crimini Mushrooms
Zucchini squash
Yellow squash
Directions:
In a large bowl, add your chicken and all of the items for your marinade into your bowl. Mix together until combined and set in the fridge for at least 30 minutes. The yogurt is going to help tenderize your meat.
Prep all of your veggies.
Grab your skewers and alternate, adding your veggies and marinated chicken
You can bake, grill or airfry your skewers, making sure you rotate at least halfway. If you want a good char, I found that it was easier to broil them at the end.
Enjoy with a side of cauli-rice, side salad or by itself!
