High Protein Mac N Cheese

 

Ingredients (serves 6)

  • 8–10 oz high-protein or low-carb pasta

  • 1 cup cottage cheese

  • 1/2 cup Fairlife milk (or preferred milk)

  • 1–1½ cups cheddar cheese (cut in small blocks or blended)

  • 1 tbsp butter

  • 1 tsp cornstarch or arrowroot starch (optional, for thickening)

  • 1/2 tsp paprika

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • Salt and black pepper, to taste

Instructions

1. Cook the Pasta

Bring a large pot of salted water to a boil. Cook pasta until just al dente according to package directions.

Reserve 1/2 cup pasta water, then drain.

2. Make the Sauce

In a blender, combine cottage cheese, milk, paprika, garlic powder, onion powder, salt, and pepper. Blend until completely smooth.

If you prefer a thicker sauce, blend in cornstarch or arrowroot starch.

3. Heat the Sauce + Combine

In a large skillet or pot over medium heat, melt butter.

Add cooked pasta and toss until evenly coated. Add reserved pasta water a little at a time if needed to loosen the sauce.

Pour in the blended sauce and cook for 2–3 minutes, stirring frequently, until warmed and creamy.

5. Finish

Taste and adjust seasoning as needed.

Optional: transfer to an oven-safe dish and broil for 2–3 minutes until golden and bubbly on top.
