Hearty Breakfast Egg Skillet
Servings: 4
INGREDIENTS:
1 turnip, shredded (like hashbrowns)
½ medium onion, diced
¼ cup mushrooms
2 garlic cloves, minced
½ tsp paprika
½ tsp cumin
½ tsp cayenne pepper
¼ cup cheddar cheese
4 eggs
Salt and pepper to taste
Garnish:
2 stalks green onion, diced
Cilantro
¼ cup salsa of choice or diced tomatoes
Sour cream
Avocados
DIRECTIONS:
Cut and peel your turnips
Using a hand shredder or food processor, shred your turnips and drain as much water as possible.
Add avocado oil to your pan.
Saute your turnips, mushrooms, onion, garlic and other veggies you want. Cook for 4-5 mins.
Create 4 wells and crack your eggs into your wells. Add cheese of choice and cover on medium low for 1-2 mins. This will depend on how cooked you want your eggs.
Garnish with your favorite toppings - green onion, cilantro, sour cream, avocado and salsa!
