Ingredients:
Chicken:
2 chicken breasts. Butterflied or cut in half
1/4 cup greek yogurt
2 cloves minced garlic
¼ tsp onion powder
½ tsp paprika
¼ tsp garlic powder
Salt and pepper to taste (if seasoning is salt free)
Cauli rice:
2 bags frozen Cauli rice
Avocado oil
Salt and pepper to taste
Chicken Curry:
2 cups curry pre-made sauce
1 bell pepper diced
½ onion diced
Any other veggies of choice
Directions:
1. Marinade your chicken with your greek yogurt, garlic, and seasonings for 5-10 minutes.
2. On a medium high heat, add avocado oil and cook your chicken for 3-4 minutes on each side, or until the inside is cooked. Remove chicken and start on your easy curry sauce.
3. Add your bell peppers and onions and saute until soft. Add curry sauce and allow it to come to a simmer. Now, add back your chicken.
4. Cook your frozen bags of cauliflower rice until nice and fluffy.
5. Assemble your plate and enjoy!
